After more than two unforgettable decades, we’re beginning the process of closing our doors here at Roosters. While we haven’t set a final date yet, we look forward to spending the coming weeks with you — sharing stories, laughter, and plenty of good food. Roosters has always been more than just a restaurant. It’s been a gathering place — a second home — where friendships are made, stories are shared, and the simple joy of good food and quality craft beers bring us all together. From our early days as Paisano’s Bar & Grill to the years as Roosters, we have been honored to be part of your lives.
We’ve had the privilege of watching families grow here — our own kids, our staff’s kids, and many of yours. Some of you came in holding little hands, and now those kids confidently find their place at the table. Those moments have meant the world to us. Roosters has never been just about the food — it’s about sharing laughter, creating memories, and finding comfort in a familiar face. We’ve celebrated birthdays, anniversaries, and this place even helped create a few lifelong partners along the way. There were live music nights that stretched into summer evenings, the smell of the smoker rolling in from the deck, and the kind of conversations that only happen over wings or smoked meatloaf. Whether it was a game of pool, a round of darts, a cornhole toss, or a scoop of ice cream from Lil Chicks, it has never been just about the activity, but about being together. Being part of downtown Three Rivers has been a true gift. Your support, your kindness, and your loyalty have filled this place with heart and soul. You are the reason Roosters feels like home.
To our incredible staff — past and present — many of whom had their very first jobs here: you have been the heartbeat of Roosters. Your dedication, care, and spirit created the welcoming place we all love. Watching many of you grow, prosper in you pursuits, and bring your own children through the doors has been one of the greatest joys of this journey.
As we step into a new chapter — with more time for grandkids, bike rides, and time at the track — we carry with us all the friendships, laughter, and love that has filled these walls. While it’s bittersweet to close, we will be leaving with full hearts and deep gratitude.
They say “food is love made visible,” and we have felt that love every day — in your smiles, your stories, and the community we built together.
